Melt-In-Your-Mouth Strawberry Tart.
1 egg yolk
3 tbsp sugar
1 tbsp flour
200g cream cheese, softened at room temperature
1 egg yolk
1 tbsp milk
1/2 pack strawberries
3g powdered gelatin
2 egg yolks
4 tbsp sugar
20g dehydrated strawberry powder

Combine all ingredients for the tart crust and mix well. Flatten it out with a rolling pin.
Transfer to a tart pan and bake for 10 minutes at 200 degrees C.
Microwave strawberries for 90 minutes at 600 watts.
To make the syrup, mash strawberries with a spoon. Add gelatin in and microwave until hot.
In a saucepan, combine egg yolk, sugar, flour and milk to make the filling.
Cook over low heat until creamy and smooth.
Add in softened cream cheese and mix well with a hand-held mixer.
Pour mixture into crust. Then top with half of the strawberry syrup. Swirl the syrup into the filling.
Refrigerate for 20 minutes. Take it out and brush on egg wash.
Bake for 40 minutes at 170 degrees C.
Decorate with sliced strawberries and brush on the remaining strawberry syrup.
Refrigerate overnight before serving.
