4 cups Dried Macaroni
2 tbsp butter
2 tbsp flour
1 cup milk
2 cups old cheddar, shredded
1/3 cup Mini (turkey) Pepperonis, quartered and whole
1/3 cup Mushrooms, finely chopped
1/3 cup Green Peppers, finely chopped
1/3 cup Red onion, finely chopped
Marinara pizza sauce
½ cup Mozzarella, shredded
2 tbsp Bread crumbs
Cook the macaroni as directed on the package in boiling salted water.
In an ovenproof skillet over medium heat, melt your butter and then sprinkle in the flour. Stir together until a paste has formed. Pour in milk and stir until the mixture thickens and there are no lumps.
Whisking constantly, mix in cheese and salt until everything is melted and well blended. DO NOT LET BOIL.
Drain the macaroni and place in a large bowl. Add to the cheese sauce as well as the quartered pepperoni, mushrooms, onion and green peppers. Stir to combine and then pour back into the skillet and spread flat.
For the topping, spoon on some of the marinara sauce to completely cover the mac and cheese and then sprinkle the mozzarella cheese over top. Finish off by adding a few whole pepperoni pieces to the top and then sprinkling with breadcrumbs. Bake for 15 min at 350 and then finish off by broiling for 5 minutes.
