Tonight my oldest baby went to her first teen Halloween party. TEEN. I now have a TEEN. Like whoa. The mom of the house having the party is so great. She texted me that the theme for the party food was Paleo. Adorbs. You know me, I like my treats as healthy as possible, and not crazy sweet. So I made these lightly sweetened candy roasted nuts for Zoe to take to the party. And I’m already imagining adding herbs (rosemary is calling my name) and other spices the next time I make them…
Candy Roasted Nuts
1/4 cup coconut sugar
1/2 teaspoon fine sea salt
1 teaspoon cinnamon
3 cups nuts
2 tablespoons water
Line a baking sheet with parchment paper and set it aside.
Place a dry 12 inch cast iron skillet over low heat.
Combine the sugar, salt, and cinnamon in a small dish, and set it aside.
Roast the nuts in the dry skillet, flipping or stirring every minute for about 12 minutes, or until the nuts are fragrant and golden.
Turn off the heat. Add the sugar blend, and water, and quickly stir to combine.
Transfer the candy roasted nuts to the lined baking sheet to cool.
