This past weekend was a much-needed “no work” weekend- and it was awesome. It was filled with dinners with friends, family time, beer tent, birthday and late Father’s Day celebrations, meeting up with an awesome new wellness blogger friend (Katie Dalebout), and an incredible night of salsa dancing with good friends.

So in the spirit of latin culture (ok, this might be a stretch), I thought I would post my latest recipe for Cauliflower Tacos. =) I’ve been so pleasantly surprised at the versatility of cauliflower.
