This is the best biscuit recipe without eggs. You will not realize that it has no eggs in it. Trust me you will fall in love with these biscuits.
During the holiday or festival season, these biscuits are a must in my home along with some other baked goodies; because we all love it.
This biscuit is a classic English dessert. In India, Shrewsbury biscuits are one of the most popular biscuits in the country and this one tastes really close to it. They are locally produced in the city of Pune, Maharashtra.
I had them whenever I pass by the famous Kayani bakery in Pune. It was a pleasure recreating this biscuits/cookie at home. The classic English biscuit recipe calls for egg; though this eggless version is as good as them.
This eggless version of biscuit is very easy to make that even beginners can also make this successfully. These cookies are rich in flavors and more crispy.
Step by step recipe of eggless biscuits:Take ¾ cup butter and ¾ cup sugar.
Whip together until light and fluffy.
Add ¼ cup apple juice.
And mix well.
We will need 2 cups of flour. Stir in the flour in small batches.

And finally mix well using hands to form a fairly firm dough.
Take out a portion of dough onto a lightly floured surface and knead lightly to get smooth dough.
Roll out the dough into ½ inch thickness.
Use a cutter and cut the dough into desired shape.
Place the cutouts on a baking sheet lined with parchment paper, keeping sufficient distance between each. Bake in a preheated oven at 350 Degree F. for about 15 minutes or until the biscuits are firm and turn golden.
Turn them over onto a wire rack to cool completely. The hot cookies will be soft but will turn crunchy when they cool down.
Store them in an airtight container and enjoy.
