It’s been a great weekend so far. Since we’ve been traveling quite a bit the last few months, Robert and I just decided to stay home this weekend. I admit I go a little stir crazy being at home, but I’ve been keeping myself busy with exercise classes, walking/running outside, cooking a lot, shooting photos, and watching online videos trying to educate myself on ‘purpose, productivity and profit’. I was recently introduced to an awesome online course called Work by Design Summit and I’m in love with the concept and SO inspired by the videos. If you have time, I highly recommend checking it out here. I also have a few books to read on similar topics, so that will be in the works for today. And later we’re going to a fun pool+food+drinks party with two of our good friends. I love Michigan summers!
One of my favorite things to make in the summer is pesto. It’s so simple to make. A food processor + a few healthy ingredients and you have yourself a yummy spread you can use in SO many different ways: on pasta, bread, pretzels, spaghetti squash, pizza, you name it. And this one is made with sunflower seeds, which always reminds me of playing softball. Anyone else" For some reason, it’s cool to spit out sunflower seeds when you’re playing ball, even if you are a 15 year old girl. Ha! Anyway…
In a food processor, add sunflower seeds and process for about 30 seconds on high, until broken into crumbs. Add all remaining ingredients and blend until combined. Makes 1 cup pesto. Best served immediately.
