Ingredients:
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 bell peppers, sliced
- 1 tablespoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 can chickpeas, drained and rinsed
- 1 head broccoli, chopped into florets
- 1 head cauliflower, chopped into florets
- 1/2 cup vegetable broth
- 1/2 cup frozen peas
- 1/2 cup frozen green beans
- 1/2 cup chopped parsley
- 1/2 cup chopped cilantro
Preparation:
Step 1: Preheat your oven to 375°F.
Step 2: In a large skillet, heat the olive oil over medium-high heat. Add the onions and garlic, and sauté until they become translucent, about 5 minutes.
Step 3: Add the sliced bell peppers to the skillet, and sauté for another 2-3 minutes.
Step 4: Add the ground spices (cumin, turmeric, paprika, coriander, cinnamon, and cardamom), salt, and pepper to the skillet, and sauté for another minute until fragrant, stirring constantly.
Step 5: Add the drained and rinsed chickpeas to the skillet, and stir until they are coated with the spices.
Step 6: Add the chopped broccoli and cauliflower florets to the skillet, and stir until they are coated with the spice mixture.
Step 7: Add the vegetable broth to the skillet, and stir to combine. Bring the mixture to a simmer. Then cover the skillet with a lid, and reduce the heat to low. Let the mixture cook for about 10 minutes, until the vegetables are tender.
Step 8: Add the frozen peas and green beans to the skillet, and stir to combine.
Step 9: Transfer the vegetable mixture to a large casserole dish.
