Aubergine Caviar Recipe
Aubergine Caviar is a classic French appetizer that is incredibly versatile and easy to make. The combination of roasted eggplant, garlic, olive oil, and spices creates a flavorful, creamy spread that can be enjoyed on its own, or served on toast, crackers, or crostini. This recipe is a great way to enjoy the flavor of aubergine without taking a lot of time in the kitchen.
Ingredients:
- 1 large aubergine (eggplant)
- 1 teaspoon of minced garlic
- 2 tablespoons of olive oil
- 1 teaspoon of smoked paprika
- 1 teaspoon of ground cumin
- 1 teaspoon of dried oregano
- 1 teaspoon of sea salt
- 1/2 teaspoon of freshly ground black pepper
Preparation:
Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper.
Cut the aubergine in half lengthwise and then into slices. Place the aubergine slices on the baking tray and drizzle with olive oil, garlic, smoked paprika, cumin, oregano, salt, and pepper. Gently mix the aubergine slices with the olive oil and spices, making sure that they are evenly coated.
Bake in the preheated oven for 25 minutes. Remove the tray from the oven and leave to cool.
Transfer the cooled aubergine slices to a food processor and blend until creamy. Add a tablespoon of olive oil if needed to create a smoother consistency. Taste and adjust the seasoning if needed.
Transfer the aubergine caviar to a serving bowl and serve with toast, crackers, or crostini. Enjoy!
