If you're on a carnivore or keto diet and craving a rich, creamy dessert that won’t kick you out of ketosis, this Carnivore Cheese and Chocolate Mousse is your dream come true. It’s indulgent, easy to make, and packed with satisfying, animal-based fats—all without using a Thermomix.
To make this low-carb delight, gather the following:
225 g (8 oz) full-fat cream cheese, softened to room temperature
2 tablespoons unsweetened cocoa powder (choose high-quality, low-additive cocoa)
2 tablespoons heavy cream
1–2 tablespoons powdered erythritol (or your favorite keto-friendly sweetener)
½ teaspoon vanilla extract (optional)
Pinch of salt
30 g (1 oz) 90% dark chocolate, chopped (optional, for extra richness)
Let the cream cheese sit at room temperature for about 30 minutes.
Place it in a mixing bowl and beat with a hand mixer or stand mixer until smooth and lump-free.
Add cocoa powder, heavy cream, sweetener, vanilla (if using), and a pinch of salt to the bowl.
Continue beating on medium speed for about 30–60 seconds, until fully combined and creamy.
If using dark chocolate, melt it gently in a double boiler or in the microwave (in 15-second bursts, stirring in between) until smooth.
Let it cool for a minute or two before adding it to the mousse to prevent curdling.
Pour the cooled melted chocolate into the mousse mixture.
Mix everything together on low speed until well blended and smooth.
Give it a quick taste and adjust the sweetness to your liking.
Add a bit more erythritol, stevia, or monk fruit if you prefer a sweeter mousse.
Spoon the mousse into small jars, cups, or ramekins.
Refrigerate for 1–2 hours until firm and chilled.
