Ingredients

To make this low-carb delight, gather the following:

  • 225 g (8 oz) full-fat cream cheese, softened to room temperature

  • 2 tablespoons unsweetened cocoa powder (choose high-quality, low-additive cocoa)

  • 2 tablespoons heavy cream

  • 1–2 tablespoons powdered erythritol (or your favorite keto-friendly sweetener)

  • ½ teaspoon vanilla extract (optional)

  • Pinch of salt

  • 30 g (1 oz) 90% dark chocolate, chopped (optional, for extra richness)


Instructions 

Step 1: Soften and Beat the Cream Cheese

  • Let the cream cheese sit at room temperature for about 30 minutes.

  • Place it in a mixing bowl and beat with a hand mixer or stand mixer until smooth and lump-free.

Step 2: Add Remaining Base Ingredients

  • Add cocoa powder, heavy cream, sweetener, vanilla (if using), and a pinch of salt to the bowl.

  • Continue beating on medium speed for about 30–60 seconds, until fully combined and creamy.

Step 3: Melt the Dark Chocolate (Optional)

  • If using dark chocolate, melt it gently in a double boiler or in the microwave (in 15-second bursts, stirring in between) until smooth.

  • Let it cool for a minute or two before adding it to the mousse to prevent curdling.

Step 4: Combine Melted Chocolate with Mousse

  • Pour the cooled melted chocolate into the mousse mixture.

  • Mix everything together on low speed until well blended and smooth.

Step 5: Taste and Adjust Sweetness

  • Give it a quick taste and adjust the sweetness to your liking.

  • Add a bit more erythritol, stevia, or monk fruit if you prefer a sweeter mousse.

Step 6: Chill and Serve

  • Spoon the mousse into small jars, cups, or ramekins.

  • Refrigerate for 1–2 hours until firm and chilled.

Optional Garnishes:

  • A sprinkle of unsweetened cocoa powder

  • Dark chocolate shavings

  • A pinch of flaky sea salt
