Place egg yolks, egg, and sugar in the Thermomix jug.
Insert the butterfly whisk and beat for 4 minutes at speed 4. This step allows the mixture to aerate and integrate properly, resulting in a fluffy and homogeneous texture.
Tip: Make sure the egg and yolks are at room temperature to facilitate mixing.
Remove the butterfly whisk from the jug.
Set the Thermomix to speed 2 for 1 minute and gradually add the mascarpone through the lid opening.

The mascarpone cream should be smooth and lump-free. Transfer the mixture to a bowl and reserve it in the refrigerator.
In the clean Thermomix jug, place the 100 g of dark chocolate and chop it for 10 seconds at speed 8.

Add 70 g of milk to the jug.
Dissolve the mixture for 3 minutes at 50ºC and speed 4. This step ensures that the chocolate is completely melted and mixes well with the milk, forming a smooth ganache.

Once the chocolate is dissolved and slightly cooled, combine it with the reserved mascarpone mixture.
Use a spatula to gently mix until both elements are well integrated. You can use the Thermomix at speed 3 for about 10 seconds to obtain a uniform mixture if desired.
Transfer the chocolate mascarpone cream to a container and store it in the refrigerator for at least an hour before using.
