  • 200 grams of warm milk

  • A pinch of salt
  • Half a cube of brewer's yeast (about 3 grams, left to rise overnight at room temperature)

  1. In the mixer, place the milk, yeast, and sugar, and program for 1 minute at 37°C, speed 2.
  2. Add the flour, eggs, vanilla powder, flavors, and pinch of salt. Program for 6 minutes in kneading mode.
  3. After 3 minutes, add the butter gradually with the blades in motion.
  4. Let the dough rest covered with plastic wrap until it doubles in size.
  5. Roll out the dough and shape the croissants (you can fill them before or leave them empty) and let them rest for another hour in a turned-off oven with the light on.
  6. Brush with egg white (optionally, sprinkle some brown sugar on top).
  7. Bake in a preheated oven at 180°C for about 25 minutes.
