Borlotti beans, also known as cranberry beans in North America, are a type of legume that is popular in Mediterranean cooking. Ingredients:

  • 1 pound dry borlotti beans
  • 1 red onion, diced
  • 1 red bell pepper, diced

  • 1/2 cup chopped fresh parsley

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 clove garlic, minced

Preparation:

1. Soak the Beans

Start by soaking the borlotti beans overnight. Rinse the beans and place them in a large bowl. Cover with water and let soak for at least 8 hours.

2. Cook the Beans

Drain the soaked beans and place them in a large pot. Add enough water to cover the beans by a few inches. Bring the water to a boil over high heat, then reduce the heat to low and simmer for 45-60 minutes or until the beans are tender. Add salt to the water during the last 10 minutes of cooking. Drain the beans and let them cool to room temperature.

3. Prepare the Vegetables

While the beans are cooking, prepare the vegetables. Dice the red onion, red bell pepper, and yellow bell pepper into bite-sized pieces. Chop the parsley and mint.

4. Prepare the Dressing

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.

5. Assemble the Salad

In a large salad bowl, combine the cooked borlotti beans, diced vegetables, and chopped herbs. Pour the dressing over the salad and toss to combine. Serve immediately or chill in the refrigerator until ready to serve.
