  • 1 cup plain yogurt
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tablespoon ginger paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon garam masala powder
  • 2 tablespoons vegetable oil
  • 1/4 cup tomato puree
  • 1/2 cup water
  • 1/4 cup cashew nuts, ground into a paste
  • Salt, to taste

Preparation

Step 1: Marinate the Chicken

In a large bowl, mix together the yogurt, ginger paste, turmeric powder, cumin powder, coriander powder, chili powder, garam masala powder, and a pinch of salt. Add the chicken pieces and coat them well with the mixture. Cover the bowl and place it in the refrigerator for at least 20 minutes to marinate. This will allow the chicken to absorb all the flavors of the spices.

Temperature and Time: Refrigerator (20 Minutes)

Step 2: Saute the Onion and Garlic

Heat the vegetable oil in a pan over medium heat. Add the finely chopped onion and garlic and saute until the onion turns light brown and becomes soft. This will take around 5 minutes.

Temperature and Time: Medium heat (5 Minutes)

Step 3: Add Tomato Puree and Cashew Nut Paste

Add the tomato puree to the pan and stir for 2-3 minutes. Then add the cashew nut paste to the pan and stir well. Cook for 2-3 minutes until the mixture becomes thick and creamy.

Temperature and Time: Medium heat (3-5 Minutes)

Step 4: Add Marinated Chicken and Water

Add the marinated chicken to the pan and stir well. Cook for 8-10 minutes until the chicken is cooked through. Then add 1/2 cup of water to the pan and stir well. Cook for another 5-7 minutes until the chicken is perfectly tender and the sauce has thickened.

Temperature and Time: Medium heat (15-17 Minutes)

Step 5: Garnish and Serve

Once the chicken is cooked, turn off the heat and garnish with fresh coriander leaves. Chicken Pasanda is traditionally served with naan bread or steamed rice. Serve hot and enjoy!

Temperature and Time: Turn off the heat
