Chinese Prawn Salad Recipe

Ingredients
- 500g peeled fresh prawns
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 cucumber, sliced
- 1 large onion, sliced
- 4 cloves of garlic, minced
- 1 red chili, sliced
- 1 inch fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon red wine vinegar
- 2 tablespoons sesame oil
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Preparation
Start by preparing your vegetables. Slice the red and yellow peppers, cucumber, and onion into thin strips. Mince the garlic, slice the chili, and grate the ginger. Set everything aside.
Next, prepare your prawns. Rinse them under cold water and take off the shells. Devein them by making a shallow incision down the back of each prawn and scraping out the black intestinal tract with a knife. Rinse them again and pat them dry with a paper towel.
Now it’s time to make the dressing. In a small bowl, whisk together soy sauce, red wine vinegar, sesame oil, brown sugar, cornstarch, and a pinch of salt and pepper until smooth. Set aside.
Heat the vegetable oil in a frying pan over medium-high heat. Once hot, add the minced garlic, chili, and grated ginger to the pan and cook for 1-2 minutes until fragrant.
Add the sliced onion to the pan and cook for 2-3 minutes until softened. Then, add the prawns to the pan and cook for 2-3 minutes until pink and cooked through. Once done, remove the pan from the heat and allow to cool for 5 minutes.
While the prawns are cooling, prepare your salad. In a large bowl, combine the sliced peppers and cucumber. Once the prawns are cool, add them to the bowl with the vegetables.
Pour the dressing over the salad and toss everything together until well combined. Be sure to coat everything evenly with the dressing.
