Ingredients
- 2 cups heavy cream
- 1 cup milk
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/8 tsp salt
- 5 egg yolks
Preparation
- In a large saucepan, combine the heavy cream, milk, granulated sugar, vanilla extract, cinnamon, and salt. Cook over medium heat, stirring occasionally, until the mixture reaches 170°F on a candy thermometer. This will take about 10-15 minutes.
- While the cream mixture is heating, whisk the egg yolks in a separate mixing bowl until smooth and pale yellow.
- Once the cream mixture has reached 170°F, gradually whisk about 1/3 of the hot mixture into the egg yolks, stirring constantly to prevent the eggs from curdling.
- Pour the egg mixture slowly back into the saucepan, stirring constantly. Cook the mixture on medium-low heat for about 5-7 minutes until it thickens enough to coat the back of a spoon. Be sure to stir constantly to prevent the mixture from curdling or boiling over.
- Remove the saucepan from heat and strain the mixture through a fine-mesh sieve into a mixing bowl. Press down on the solids with the back of a spoon or spatula to extract all the liquid.
- Cover the mixture with plastic wrap, pressing the wrap directly onto the surface of the mixture to prevent a skin from forming. Chill the mixture in the refrigerator until it’s completely cold, at least 4 hours or overnight.
- Once the mixture is cold, transfer it to an ice cream maker and churn according to the manufacturer’s instructions until it’s thick and creamy, about 20-30 minutes.
- Transfer the ice cream to a freezer-safe container and freeze it for at least 2 hours to allow it to firm up.
- Serve the cinnamon ice cream with your favorite toppings like whipped cream, caramel, chopped nuts, or a drizzle of chocolate sauce.
