  1. Preheat the oven to 180°C/fan 160°C/gas mark 4. Grease and line two 20cm round cake tins with baking paper.
  2. Cream the butter and sugar together until light and fluffy using an electric mixer.
  3. Add the eggs one at a time, beating well after each addition.
  4. Sift in the flour and fold it into the mixture until well combined.
  5. Dissolve the instant coffee in 2 tbsp boiling water and stir into the mixture, along with the chopped walnuts. Mix well.
  6. Add the milk and stir until the batter is smooth and well combined.
  7. Divide the mixture evenly between the two prepared tins and smooth the tops with a spatula.
  8. Bake for 20-25 minutes until the cakes are golden brown and a skewer inserted into the center comes out clean.
  9. Leave the cakes to cool in their tins for a few minutes, then turn them out onto a wire rack to cool completely.
  10. While the cakes are cooling, make the icing. Dissolve the instant coffee in 2 tbsp boiling water and leave to cool.
  11. Cream the butter and icing sugar together until light and fluffy using an electric mixer.
  12. Add the cooled coffee and beat until the icing is smooth and well combined.
  13. Place one of the cooled cakes on a plate or stand and spread half the icing over it. Place the second cake on top and spread the remaining icing on top.
  14. Decorate with walnut halves and serve.
