- Preheat the oven to 180°C/fan 160°C/gas mark 4. Grease and line two 20cm round cake tins with baking paper.
- Cream the butter and sugar together until light and fluffy using an electric mixer.
- Add the eggs one at a time, beating well after each addition.
- Sift in the flour and fold it into the mixture until well combined.
- Dissolve the instant coffee in 2 tbsp boiling water and stir into the mixture, along with the chopped walnuts. Mix well.
- Add the milk and stir until the batter is smooth and well combined.
- Divide the mixture evenly between the two prepared tins and smooth the tops with a spatula.

- Place one of the cooled cakes on a plate or stand and spread half the icing over it. Place the second cake on top and spread the remaining icing on top.
