  • 4 garlic cloves, minced
  • 1/2 cup cold water
  • 1 hog casing (optional)


  1. In a large bowl, mix together the veal, pork, salt, black pepper, paprika, fennel seeds, red pepper flakes, and garlic. Mix until well combined.
  2. If using a hog casing, soak it in cold water for 30 minutes, then rinse and drain. Thread the casing onto a sausage stuffer, and then, using the attachment for a KitchenAid stand mixer, stuff the meat into the casing.
  3. Preheat your grill or pan to medium-high heat. If using a grill, lightly oil the grates using a brush.
  4. Cut the sausage into desired lengths, such as 4-inch logs.
  5. When the grill or pan is hot, place the sausages over the heat, and cook for five minutes on each side. Make sure to turn the sausages gently, so they do not break apart or lose their juice.
  6. Reduce the heat to medium-low, and continue to cook the sausages, turning occasionally, for an additional 10 to 15 minutes, or until the internal temperature reaches 160°F.
  7. Remove the sausages from the grill or pan, and allow them to rest for about 5 minutes before serving. This allows the juices to redistribute and the sausages to cool slightly.
