  • Lasagne sheets – 250g
  • Prawns – 300g
  • Spinach – 200g
  • Onion – 1 large
  • Garlic cloves – 4
  • Olive oil – 3 tbsp

  • Milk – 800ml
  • Nutmeg – a pinch
  • Salt – to taste
  • Black pepper – to taste
  • Mozzarella cheese – 200g
  • Parmesan cheese – 50g

Preparation of the Prawn & Spinach Lasagne Recipe

  1. Preheat the oven to 180C/160C fan/gas 4.
  2. Cook the lasagne sheets according to packet instructions, until al dente. Drain and set aside.
  3. Prep the ingredients: finely chop the onion and garlic cloves, de-vein and de-shell the prawns, chop the spinach.
  4. Heat the olive oil in a large frying pan over medium heat. Add the onion and fry until softened, about 5-7 minutes. Add the garlic and cook for another minute, stirring frequently.
  5. Add the prawns and spinach to the frying pan and cook until the prawns are pink and opaque, the spinach has wilted and any water has evaporated away, i.e. 4-5 minutes. Set the prawn and spinach mixture aside.
  6. Make the bechamel sauce: melt the butter in a saucepan over low heat, then add the flour and stir continuously until combined to form a paste. Gradually add the milk, a little at a time, whisking between each addition until the sauce is smooth. Allow the sauce to cook on low heat for another 5 minutes, stirring often.
  7. Season the bechamel sauce with a pinch of nutmeg, salt, and black pepper, to taste.
  8. Assemble the lasagne: spoon a third of the bechamel sauce onto the bottom of a 20 x 30cm oven-safe dish. Cover with a layer of lasagne sheets, then add half of the prawns and spinach mixture. Repeat the layers, ending with a final layer of lasagne sheets topped with the remaining bechamel sauce and grated mozzarella and Parmesan cheese.
  9. Bake the lasagne in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbling.
  10. Remove from the oven and leave to cool for a few minutes before serving.
