- Lasagne sheets – 250g
- Prawns – 300g
- Spinach – 200g
- Onion – 1 large
- Garlic cloves – 4
- Olive oil – 3 tbsp
- Butter – 50g

- Salt – to taste
- Black pepper – to taste
- Mozzarella cheese – 200g

- Preheat the oven to 180C/160C fan/gas 4.
- Cook the lasagne sheets according to packet instructions, until al dente. Drain and set aside.
- Prep the ingredients: finely chop the onion and garlic cloves, de-vein and de-shell the prawns, chop the spinach.
- Heat the olive oil in a large frying pan over medium heat. Add the onion and fry until softened, about 5-7 minutes. Add the garlic and cook for another minute, stirring frequently.
- Add the prawns and spinach to the frying pan and cook until the prawns are pink and opaque, the spinach has wilted and any water has evaporated away, i.e. 4-5 minutes. Set the prawn and spinach mixture aside.
- Make the bechamel sauce: melt the butter in a saucepan over low heat, then add the flour and stir continuously until combined to form a paste. Gradually add the milk, a little at a time, whisking between each addition until the sauce is smooth. Allow the sauce to cook on low heat for another 5 minutes, stirring often.
- Season the bechamel sauce with a pinch of nutmeg, salt, and black pepper, to taste.
- Assemble the lasagne: spoon a third of the bechamel sauce onto the bottom of a 20 x 30cm oven-safe dish. Cover with a layer of lasagne sheets, then add half of the prawns and spinach mixture. Repeat the layers, ending with a final layer of lasagne sheets topped with the remaining bechamel sauce and grated mozzarella and Parmesan cheese.
- Bake the lasagne in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbling.
- Remove from the oven and leave to cool for a few minutes before serving.
