1 ½ cup flour
1 ½ tsp baking powder
1 ½ cup milk
3 Tbsp butter, melted
2 large chicken cutlets
2 eggs, beaten
Honey, for drizzling
Salt, to taste
Whisk together flour, baking powder, eggs, milk, and butter in a large mixing bowl. Add grated Parmigiano-Reggiano to taste and combine. Cook batter according to waffle maker instructions.
Season chicken with salt. Grate Parmigiano over chicken cutlet and pat it down to ensure it sticks. Dip cutlet in the eggs and then the breadcrumbs. Heat oil in a pan over medium-high heat. Cook about 3-4 minutes on each side.
To assemble, layer chicken cutlet on top of waffle, grate Parmigiano-Reggiano over top, and drizzle with honey.
