I used the new Crock-Pot Casserole Crock Slow Cooker to update the photos for this Spicy Slow Cooker Rice Casserole with Green Chiles, Green Onions, and Cheese, and this is definitely a wow for a side dish with healthy converted rice!
If you're following my slow cooker site, then you know I've become infatuated with the new Crock-Pot Casserole Crock Slow Cooker. This new product from the company that made the original Crock-Pot has a crockery insert in the shape of a casserole dish, and I've been having so much fun experimenting with it.
I've fallen so hard for this new slow cooker model that on Slow Cooker from Scratch I'm launching a new Saturday feature called Casserole Crock Saturdays, and every Saturday I'll be sharing recipes for the Crock-Pot Casserole Crock Slow Cooker. I kicked that off yesterday on Slow Cooker from Scratch with Slow Cooker Pesto Mushroom Lasagna from my friend Karen.
And I had good intentions of having a new recipe to share here that used the new Casserole Crock Slow Cooker, but the recipe for Low-Carb Sour Cream Chicken Enchiladas I've been working on needs just a little more experimenting before it's ready for prime time (although my brother Rand has been happily eating up all the experimental versions!)
I promise slow cooker enchiladas will be appearing here sometime soon, but for today I'm updating this favorite recipe for Spicy Slow Cooker Rice Casserole with Green Chiles, Green Onions, and Cheese with a much more photogenic version made in the Crock-Pot Casserole Crock Slow Cooker!
