I think I can safely say that any cook who likes to make up recipes has probably had some recipe ideas that were slightly different versions of an earlier favorite, so let me start right out by saying that these Easy Cucumber Guacamole Appetizer Bites are completely a variation of the Hummus and Cucumber Appetizer Bites that I've been making for years. And when I was craving guacamole and the idea for these appetizers with guacamole and cucumber popped into my mind (and then I made them!) I toyed with the idea of just adding to that post with a note that you could make them with guacamole as well.
But in the quirky way the internet works, if someone is searching for low-carb guacamole recipes, they'd never find this idea tucked away in a recipe for Hummus and Cucumber Appetizer Bites. And for the guacamole bites, I added a slight change to this not-really-a-recipe recipe, hollowing out the cucumber with a melon baller. So here it is, a brand shiny new post for this ridiculously easy but delicious idea for a good vehicle to deliver guacamole to your mouth!
